There is no love sincerer than the love of food.
The entire concept of buying local, homegrown produce for use in commercial kitchens have made strides and bounds over the past few years. With the increase in the obesity rate, and consumers becoming more aware of the ingredients and suppliers we use in the restaurant industry, it was only a matter of time before they started to discover the unnatural and unhealthy items we use. Many small restaurants and chefs have already joined this movement by offering fresh produce and meats that come from local farms and nurseries.
Buying local also adds an economical touch that many large wholesalers and suppliers can not achieve. The money used to purchase ingredients locally will stay local and be used to support the infrastructure of the community in and around the restaurants location.

Many of the chefs and restauranteurs I know have found that adding trufles to a dish can drastically change the flavor profile and add in a touch of “earthiness” that can be missing from some of the flavors. I encourage everyone to watch this video and see how the truffle trade has grown.
